Blue Cheese Vinegarette

This is a super quick and easy dressing to make. Goes great tossed with mixed greens and sliced mushrooms. Omit the blue cheese to make Red Wine Vinegarette.

What You’ll Need:

    • 9 tablespoons Olive Oil
    • 3 tablespoon Red Wine Vinegar
    • 1 tablespoon Dijon Mustard
    • 1 teaspoon Honey, Agave Nectar, or Sugar
    • Salt
    • White Pepper (Black Pepper also works)
    • Blue Cheese

    Quick Tips

    • The ratio is 1 part vinegar to 3 parts oil. You can make as much or as little as you want if you follow this ratio.
    • The dijon acts as a suspension agent to keep the oil and vinegar mixed. You can add as much or as little as you desire. It can even be omitted.
    • The sugar helps balance the tartness of the vinegar. Add more to reduce the tartness or add less sugar to make your vinegarette tarter.
    • Salt and Pepper are to taste

    Preparation:

    Preparation is simple. Add all of the ingredients into a blender or food processor and blend. If you’re making it without the blue cheese you can mix it directly in the serving bottle/container.

    Hummos (Chickpea Dip)

    This is a delicious dip that is super easy to make. Goes great as a dip for chips or as a spread on sandwiches. Why buy Hummus in the grocery store when you can make it yourself, and save a couple bucks too!

    This recipe is for one style of Hummus (Hummos). See the bottom for variations.

    What You’ll Need:

    • 1 15oz can of Chickpeas, including the liquid
    • 4 tablespoons of Tahini
      (pureed roasted sesame seeds, consistency is like watery peanut butter)
    • 3 tablespoons of Lemon Juice
      (I recommend using bottled lemon juice as fresh squeezed can get very expensive)
    • 1/4 cup Olive Oil
    • Salt, to taste

    Preparation:

    Put all of the ingredients in a food processor (a blender might work?) and chop until your desired consistency is reached. I like mine slightly chunky but you can keep going to get a smoother hummos.
    Taste your hummos. If it tastes flat (like beans) add a little more salt until the flavors “pop”.

    Variations:

    Flavors:

    • Add minced garlic for a spicier garlicy flavor.
    • Add fresh chopped spinach and an extra tablespoon of lemon juice for a “fresh” tasting hummos.
    • Add 2 tablespoons ground cumin seed for a delicious cumin flavored hummos.

    For a thicker hummus like you’d find at the supermarket:

    • Drain the chickpeas
    • Add 1 tbsp water
    • Omit the olive oil
    • Puree until it has a thick, even consistency
